Blue cheese and pomegranate salad

You will need:

55g Rocket

120g Blue cheese

150g Pomegranate

Parmesan to shave

Drizzle of Rosemary infused olive oil

NOTE: watch out for cheese which contain rennet

 as rennet is taken from the stomachs of

slaughtered newly-born calves.

1. De-seed the pomegranate

Here is a very handy and extremely quick way to get the seeds out of a pomegranate.
Cut the pomegranate in half. Point the flat cut side facing down. Place above a large
 bowl and hit the pomegranate with a spoon. The seeds will fall out with ease.
However this can be a little messy so take precautions.

2. Assemble

Wash the rocket and sprinkle around a bowl.
Sprinkle the pomegranate over, crumble the blue cheese on top.
Then using a peeler, shave the parmesan cheese over the salad.

Drizzle with Rosemary infused olive oil and serve.
