1. Muffin mixture Sieve the flour and baking powder together into a large mixing bowl. Whisk together the eggs, milk, and melted butter. Mix well then add the sugar. At this point mix into the wet mixture one of the flavours from the list below . Fold the wet mixture into the flour. Fold it in gently and try not to overwork the mixture as it will make the muffins tough. As soon as the wet mixture is incorporated into the flour stop mixing. 2. Decorate accordingly and bake Spoon the muffin mix into muffin cases which have been placed in a muffin tray. Decorate as instructed for each individual flavour then bake at 200c for 20 minutes |

![]() Seedy Banana breakfast flavour You will need: 1 bananas (well mashed or blended) 4 tbsp crushed flux seeds 3 tbsp sesame seeds 2 tbsp sunflower seeds 1 tbsp pumpkin seeds 1tsp cinnamon Decoration: One slice of banana on each muffin and sprinkle with oats. |

![]() Orange, cranberry and pomegranate flavour You will need: 100g dried cranberries Seeds from half a pomegranate5ml Orange blossom water Decoration: Slice an orange then cut each slice into quarters. Place a quarter on each orange. |

![]() Lemon tea breakfast muffin flavour You will need: 5 lemons 2 tea bags 50 ml water 100g caster sugar Place the juice on the lemons, tea bags, sugar and water in a pan and bring to the boil. Once boiling remove from the heat and allow to infuse for 20 minute. Once infused remove the tea bags and reduce to a thick syrup. Allow to cool completely, add the thick syrup to the muffin mixture. Decoration Slice the lemon, then cut slices in half. Place on on each muffin then bake. |
