To make the plain muffin mix you will need:

400g / 140oz  plain flour

3 tsp baking powder

2 eggs

85g / 3oz unsalted butter

175g / 14oz caster sugar

284ml / 10fl oz milk

 

Mix together the baking powder, sifted flour and sugar, then make a well in the centre.

Beat the eggs and melt the butter, then pour into the well and stir the mixture together, adding the milk gradually. Take care not to over mix.

Now gently stir in your preferred mixture:

 

   
           
                     
     

 

You will need:

2 bananas

4 tbsp crushed flux seeds

3 tbsp sesame seeds

2 tbsp sunflower seeds

1 tbsp pumpkin seeds

a sprinkle of oats

 

 

Mash 1 banana to a pulp and add to the plain muffin mixture, then fold in the seeds.

Decorate with sliced banana and sprinkle with oats. Bake at 200c for 20 minutes.

   
           
                     
     

 

First roast the cranberries for 5 minutes at 200c. 

Add the pomegranate fruit segments, the juice from one orange and its finely grated zest to the plain muffin mixture, and mix together. Bake for 200c for 20 minutes.

 

You will need:

1 large orange

1/2 pomegranate

250g cranberries

   
                     
     

 

You will need:

5 lemons

2 tea bags

1 small piece of ginger

100g caster sugar

 

Boil half a pint of water and add 2 tea bags, the juices of 4 lemons and the finely chopped ginger.

Allow to brew and then remove the tea bags. Add 100g of sugar and reduce by 3/4, until the texture becomes thick.

Remember the mixture will thicken more once cooled.

Once cool stir the majority of the liquid into the plain muffin mixture, decorate with a slice of lemon and brush with the left over syrup. Bake at 200c for 20 minutes.
