    Flat yam bread

You will need:

500g Yam

 150g plain flour

 56ml milk

7g instant yeast

1 large egg

sea salt to taste

30ml olive oil

Method

Peel and cut the yam into inch cubes. Boil till completely soft then drain.

Mash the yam together with the olive oil and salt.

Gently heat the milk to just over room temperature then add the instant yeast.
Leave for a few minutes then stir the milk mixture into the mashed yam.

Beat the egg and also stir into the mixture.

Sift the flour into a bowl, pour the wet mixture into the flour and bring together with your hands.
Once the mixture comes together to form a dough take it out of the bowl and kneed on a
floured surface for a few minutes. Place back in the bowl, cover and leave somewhere warm
for an hour.

After the hour is up, kneed for a few more minutes then flatten out into a disc.
Using a rolling pin, roll the dough till half a centimetre thick.

Place on a well oiled non-stick tray, drizzle oil over the top and sprinkle with sea salt.

Bake for 30 minutes at 180c
