You will need: 500 gram Yam 1 Large egg 150 grams flour 56ml / 2 fl oz milk pinch of salt Drizzle of olive oil |

Firstly peel and cut the yam into rough inch cubes and boil for around 15 minutes till soft. Drain and mash finely with the milk till soft allow to cool. Beat the egg and mix in. Sift the flour and mix in with your hands till it forms into a tough dough. Kneed on a floured surface for a few minutes, roll out out till half a cm thick and place on on an oiled non stick tray, drizzle top with olive oil and then bake for 15 to 20 minutes. Serve warm, an excellent bread simple in flavour. An ideal side dish with our Jamaican stew or other strong flavoured stews or soup.
