  Vegetarian Fussy Fingers

You will need

400g sweet potatoes

100g peas (frozen peas)

100g tinned sweet corn

4 eggs

4 Slices brown bread

200g plain flour

50g flour

20g olive oil

Here is a fantastic alternative to fish fingers, our very own vegetarian fussy fingers.
 Easy to make, tasty and very popular with vegetarian children and
vegetarian adults too.

1. Fussy Fingers mix

Peel, chop and boil the sweet potatoes till soft. Mash them with a fork or potato
masher till smooth. Add the peas and sweet corn and allow to cool.
Once cool fold 200grams of plain flour into the sweet potato mixture.

Leave to one side for now.

2. Bread crumbs

Toast the brown bread and place it in a food processor. You can if you wish
 add herbs and spices to the breadcrumbs for extra flavour and excitement.

3. Making the fingers

Beat the eggs and place in a bowl.
Place the 50grams flour in another bowl and the breadcrumbs in another bowl.

Take a small amount of the sweet potato mixture and roll it into roughly into one inch
 thick and 4 inch long shapes.

Roll it in the flour, then dip it quickly in the egg. Finally roll it in the breadcrumbs.

Place them on a lightly oiled tray and bake for 20 minutes at 200c till the Fussy fingers
turn golden brown.
