You will need: 400grams Sweet potatoes 100grams peas (typical frozen peas) 100grams sweet corn 4 eggs 4 slices of brown bread 1 cup of flower Roughly 20 grams Flour |

This is a great dish for your little or not so little fussy vegetarian kids! First boil the sweet potatoes till soft, drain and then mash. Mix in the sweet corn, peas into the sweet potatoes and put to one side for a while. Toast the bread and crumble in a food processor, blend into fine crumbs. Beat the eggs and place into a bowl. Take a small amount of the mixture and roll in into "fish figure" shape rectangles, roughly one inch wide and four inches long. Roll each one in the flour, then roll in the beaten eggs and finally the breadcrumbs. Bake for 20 minutes at 200c. Serve with homemade ketchup!
