You will need:

220g Vegetarian Halloumi cheese

70g Set honey

2floz Olive oil

1 lemon

40g mixed leaf salad

 
 

Roasted butternut squash salad

       
 

       
             

 

   

Firstly pour the olive oil into a pan and spoon in the honey. Gently heat while stirring to dissolve the honey into the oil. Do not bring to the boil, as soon as you see bubbles appearing remove from the heat. Allow to cool, squeeze in the juice from one lemon and stir.

Cut the Halloumi cheese into slices and place in a shallow dish. Pour the oil mixture over the Halloumi making sure all the slices are well covered and leave to marinade for at least one hour. Overnight would be best but not completely necessary.

Drizzle olive oil in a frying pan and bring to the heat. Take the Halloumi out the marinade and fry in the pan. till golden brown. Take care while you fry as these will spit a bit.

Serve immediately on a bed of mixed leaf salad. Will  serve 2 people.
