Peel the plantain, cut in half then again lengthways.
Drizzle the olive oil over the plantain and sprinkle with
the jerk powder.
Toss the plantain till evenly coated, working the jerk
flavour into the plantain. Leave for at least one hour.
Heat a pan to a medium heat and fry till golden brown,
should only take 5 - 10 minutes depending on the ripeness and size of your
plantain. |
