Coconut Rice and Pea

You will need:

Half a white onion

125g white rice

200g  kidney beans (tinned)

125ml Coconut milk

125ml water

10ml vegetable oil

Salt and pepper

A traditional Cambodian sweet dish,
with bananas, nuts and coconut milk.
 
Rice and pea is actually rice and kidney beans. In Jamaica they call kidney beans peas.


Coconut Rice and Pea recipe

Rinse the tinned kidney beans in water then drain.

 Finely chop the onion and fry in the oil till soft but do not allow them to colour.

Add the kidney beans, rice, water and coconut milk. Session to taste with salt and pepper
then simmer till the liquid is absorbed.

Serve warm along with the rest of our  Vegetarian and Vegan Jamaican dishes.
