You will need:

Half a white onion

125grams White Rice

200grams Kidney beans

56 ml 2 fl oz Coconut milk

 

                      

First boil the rice till cooked, drain and leave to one side.

Finley slice the onion and fry on a medium heat till soft and slightly coloured, add the kidney beans fry for a couple of minutes and the stir the rice. Fry for a further couple of minutes and then pour in the coconut milk. Remember coconut milk settles in the can so stir it well before pouring, I've been caught out by this a couple of time.

Cook till the coconut milk reduces and is absorbed into the rice.
