Greek tomatoes (vegetarian)

     
 

 
   

   

         

 

You will need:

180g / 4 baby sweet peppers

125g ricotta cheese

10g spring onions

10g fresh basil

1/2 tsp Tabasco sauce (Habanero sauce)

drizzle of olive oil

pinch of salt and pepper

 

 

     
   

Finely chop the basil leaves and spring onions then mix together in a bowl with the ricotta cheese, Tabasco sauce, and salt and pepper.

Cut the tops off the baby sweet peppers and remove the seeds. Stuff the cheese mixture into the peppers, then put the tops back on.

Place on a baking tray, drizzle with olive oil and bake for 10 minutes at 220c.
