Cook the pasta in well salted boiling water till
it reaches your preferred texture then drain.
2. Roast the tomatoes
While the pasta is boiling roast the baby
tomatoes. To do this simply place the baby
tomatoes on a non-stick
tray,
drizzle with
garlic infused olive oil, sprinkle with sea
salt
and place in a preheated oven at
180c for 15 minutes.
3. Combine and serve
Once the pasta and tomatoes are cooked
mix them together with the basil leaves, rocket,
dried chilli
seeds,
a healthy drizzle of
garlic infused olive oil,
season
accordingly then
serve immediately.
