You will need: 4 medium-sized tomatoes a small bunch of fresh basil 50g spinach 200g Port Salut cheese 375g of pre-rolled puff pastry

Take the pre-rolled pastry sheet and lay it flat on a greased non-stick tray. Wash the spinach and basil, then drain well to prevent the pastry getting soggy. Spread both evenly across the pastry sheet, leaving a 2 inch margin around the sides. Dice the the tomatoes, tear the cheese and spread evenly within the margins. Sprinkle with a pinch of salt and some cracked pepper to taste. Bake for 10 minutes at 200c Drizzle with garlic infused olive oil and serve. Simple, quick and very tasty! |
