This is one of the way I use my empty vanilla
pod skins. You can also include the seeds
but I
prefer to use them in my baking. Vanilla skins
actually contain the majority of the flavour but
are
very hard to incorporate into
cooking aside from vanilla sugar, vanilla
extract or stock syrups.
Make your own vanilla vodka:
De-seed the vanilla pod, watch the video below
if you do not know how to.
Place the empty vanilla pod skins into the vodka, you
may also
include the seeds if you wish.
Seal the bottle, then leave to infuse for 4
weeks minimum.
