Place the tofu, chocolate, coco powder, sugar and peppermint
extract in a flat blender and blend till silky smooth. Melt
50g of dark chocolate in a glass bowl above a pot of
simmering water. Once melted and lump free fold into the
chocolate mix. Place the chocolate delight into wine
glasses. Roughly chop the rest of the chocolate
and sprinkle over the chocolate delight.
Chill in a fridge for at least two hours to set.
