Vegan mint chocolate delight

You will need:

350g silky plain tofu (Morinaga)

50g coco powder

50g icing sugar

100g vegan dark chocolate

3-4 drops of pepper mint extract

food processor

This is a really quick and easy vegan pudding. Packed with flavour and creamy texture,
you'd never know it is vegan.

1. Tofu chocolate mix

Place the tofu, Icing sugar and coco powder in the food processor and blend till smooth.
Melt 50g of the dark vegan chocolate on a Bain marie then allow to cool slightly.
Add the melted chocolate to the tofu mixture and blend again till smooth.
Add the pepper mint extract then blend it into the mixture, taste in-between drops so as
not to over power with mint.

Pour the mixture into wine glasses, with this recipe I filled 4 medium wine glasses.

Place in the fridge and allow to set.

2. Simply assemble

Take the rest of the chocolate (50g) and chop roughly into a mixture of rustic sizes.

Sprinkle the chocolate into the glasses and enjoy.

Fantastic with a splash of vegan cream.
