You will need: 2 large beef tomatoes 100g Greek feta cheese 100g mixed green and black olives 50g red onion (roughly 1/2 an onion) 7 1/2g fresh sage 2 tbsp olive oil 1 tbsp balsamic vinegar pinch of sea salt and crushed pepper |

| Cut off the top of the tomatoes and carefully spoon out the insides. Discard the juices and roughly cut the solid insides into centimetre cubes. Peel and finely slice the onion then add it to the chopped tomatoes. Drain the feta and cut into centimetre cubes, then finely chop the sage. Place all of your chopped ingredients into a bowl, add the olives, olive oil, balsamic vinegar, and the salt and pepper. Toss together well and spoon into the hollow tomatoes. Place on a baking tray and cook for 15-20 minutes at 200c.
