Greek vegetarian stuffed tomatoes

You will need:

2 large beef tomatoes

100g Greek feta cheese

100g mixed green and black olives

50g red onion (roughly 1/2 an onion)

2 sprigs fresh Oregano (or 2 tsp dried)

2 sprigs fresh Dill

2 tbsp olive oil

1 tbsp balsamic vinegar

Sea salt and crushed pepper

1 Prepare your tomatoes

Slice your beef tomatoes one centimetre from the top. Scoop out the solid flesh and
 chop roughly, place to one side for now along with the hollow beef tomato shells.


2. Greek Tomatoes filling

Peel and finely slice the onion.
Finley chop the fresh dill, and oregano.
Slice the de-piped olives.
Drain and cut the feta cheese into centimetre cubes.

Take all the prepared ingredients above and mix them with the chopped
beef tomato flesh, the olive oil and balsamic vinegar. Session well with the
salt and pepper. Stuff the mixture into the empty beef tomato shells.

3. Bake

Place on a baking tray, drizzle with more olive oil, sprinkle with
 salt and pepper then bake for 15-20 minutes at 200c.
