You will need:

125g Vegan margarine

250g plain flour

50g sugar

1 pitch of salt

284g (average medium size jar) of your favourite jam

8 cm cookie cutter

 
   

Firstly place the flour, butter, sugar and salt in a bowl. Rub the mixture in between your fingers till it resembles fine breadcrumbs. Once the mixture resembles bread crumbs add a couple of drops of water and mix in with your hands till the comes together and forms a dough. Wrap the dough in cling film an place in the fridge to chilled for ten minutes.

Once chilled unwrap the dough and roll out on a floured surface till around a millimetre think. Cut out circles using a 8 cm cookie cutter and place them in grease tray miniature cake tins or a muffin trays. Place in the oven for ten minutes at 220c / 427f / gas mark 7 for tem minutes till lightly brown and firm to touch. Take them out the oven and turn the oven down to 110c / 225f gas mark 1/4. While the oven is cooling spoon 1 tsp of jam into each pastry base. Place back in the oven for ten to fifteen minutes till the jam melts into the shape of  pastry base.

Allow to cool completely as jam will be incredibly hot and mouth burning. This recipe makes 20 vegan jam tarts.
